Red Snapper Cakes Served With Mint Tomato Salsa














For this week, i learned about how to cook a Red Snapper Cakes served with Mint Tomato Salsa. This main item is familiar with the fish cake that are sell in the market which is made up of fish fillet, Corn flour and seasoning. Where by the local people often bought from the market. So, today recipe are a lot more different from the ordinary Fish Cakes that are sell in the local market. For the recipe are listed below.

Recipe:

Red Snapper Cakes:
  • Red Snapper - Fillet/ Skin off
  • Bread Crumbs - 2 tbsp
  • Carrot - 1 tbsp/ Brunnoise
  • Fresh Coriander Leaves - 1 tsp/ Finely Chopped
  • Onion - 1 tbsp/ Small Dice
  • Lemon juice -  1 tbsp
  • Cooking Oil - 3 cups

Mint Tomato Salsa:

  • Fresh Tomato - 2 nos/ Small Dice
  • Fresh Mint Leaves - 2 stalks/ Chiffonade
  • Lemon Juice - 2 tbsp
  • Onion - 1/2 no/ Small Dice
  • Seasoning

Preparation Method:

Red Snapper Cakes:
  1. Fillet a fish skin off, and wash gently. Season lightly.
  2. In a food Processor, add the fish fillet, breadcrumbs, carrot, fresh coriander leaves, onion, and lemon juice. Press the on button and blend until they had a finely texture. Take out and shape the mixture using hand into desirable shapes. Set aside.
  3. *Optional* in a dry blender, add the breadcrumbs, fresh coriander leaves and mint. blend until it combine together.
  4. Coat the fish cakes evenly with the herbs breadcrumbs. Set aside.
  5. On a bottom pan, heat the cooking oil into medium-high heat. Deep fried the fish cakes until golden brown. Season lightly, set aside.

Mint Tomato Salsa:

  1. In a medium size bowl, add the tomato, fresh mint leaves, onion and lemon juice. Season lightly and set aside.
  2. When service, prepare ahead of time a fresh Butter Lettuce in an ice water to keep the freshness and keep it more crunchy. Arrange elegantly on the plate to produce more appetite.
